Roast Chicken with Spring Veggies
You love chicken, and when you think about spring, you think of vegetables! This is a no-brainer. Just heat the oven to 500 degrees Fahrenheit, drizzle the chicken with olive oil, and roast it, skin on, with the skin facing up for 15 minutes. Scatter the vegetables around the chicken and then put the whole thing back in for another 20 minutes or so. You'll know it's ready when all the veggies are cooked through and the chicken skin is crispy.

When you think of spring, you think of veggies! You're also not looking for a recipe that involves meat. This is a no-brainer! Simply cook the pasta as you normally would, but put all the veggies you want into the boiling water approximately three to five minutes before straining. Once that's done, mix it all with some red pepper flakes, Parmesan, olive oil, mint, and goat cheese.

Poppy Seed Chicken Pita
Try these pita pockets stuffed with orange-scented, shredded chicken in a yogurt sauce with nuts, celery, poppy seeds, and chives. Simply boil chicken in water with orange peels for 18 minutes. Then mix orange zest, mayo, sour cream, mustard, celery, nuts, chives, poppy seeds, one-half teaspoon salt, and pepper to taste. Add the apricots, if desired. Shred the chicken, discarding the bones and skin, and toss with the dressing. Stuff a few lettuce leaves and some of the chicken salad into each pita.

Spinach-Orzo Salad with Shrimp
Boil orzo like you would pasta. Preheat the broiler. Toss the spinach, radishes, cucumber, onion, olives, mint, parsley, and one-third cup each lemon juice and olive oil in a large bowl. Add the orzo and season with salt and pepper. Toss the shrimp with the remaining two tablespoons each lemon juice and olive oil in a bowl. Arrange on a foil-lined broiler pan and broil until slightly pink, one to two minutes. Turn and broil until just cooked through, two to three more minutes. Mix it all together, top with Feta, and serve.
