Chocolate Nice Cream
Cut up 2 bananas, put them in a glass container, and freeze for no less than 3 hours. Blend them up without thawing out so an ice cream consistency is achieved. Add 1 tbsp cocoa powder to the mix, blend once more till smooth, then pour back in the glass container and freeze for 30 extra minutes. Serve and enjoy! Yields 2 servings.

Chicken Parmesan
Boil a serving of whole wheat or whole grain pasta. Another option is lentil pasta. Just make sure to read the ingredients and avoid anything that has eggs or milk in it. Add 1 tbsp of vegan butter to the pasta after straining, and set aside. Then take 1 tomato and broil it until the skin is partially black (charred). Take it out, place in a bowl, cover with cling wrap. Let it sit for 10 minutes, peel the tomato and blend to make a sauce. Add black pepper and garlic salt, and basil to taste. Simmer over heat for 30 minutes, pour overtop of the pasta. Finish off with 1 serving of vegan cheese and vegan chicken. Yields 1 serving.

Pumpkin Mug Cake
Spray coconut oil in a mug. Mix in 3 tbsp of pumpkin puree (organic) with 2 tbsp of coconut milk, 2 tbsp of sugar in the raw, 1 tbsp of maple syrup (or agave nectar), 3 tbsp of flour, 1/2 tsp of baking powder and a pinch of cinnamon and nutmeg. It should be a thick batter. Heat up in the microwave for 1 minute, 30 seconds. Yields 1 serving.

Ricotta & Crackers
1 1/2 cup of lightly salted cashews, 1/2 cup of water, the juice of a large lemon and garlic salt to taste is all you need. Blend it all up until it resembles the consistency of hummus. Add more cashews if needed. Stores in fridge for a week, and yields 2-3 servings. Serve with Saltine Crackers Original.
